Ideas for a Memorial Day Cookout

Celebrate the unofficial start of summer with these Memorial Day meals.

Memorial Day weekend is fast approaching us, folks! You know what this means: a day off from work (for many of us), the beginning of summertime—and barbecues! My question for you is: Are you ready?

Still stuck on coming up with ideas to celebrate next weekend? These are some of my favorites for a fun and easy Memorial Day cookout.


On The Grill:
All-American Burgers
BBQ Mushroom-Turkey Burgers
Grilled Garlic-Soy Chicken
Marinated Shrimp Kabobs


On The Side:
Cowboy Baked Beans
Loaded Potato Salad
Broccoli Bacon Salad
Greek Orzo Salad
Grilled Brown Sugar Sweet Potatoes Sticks


Sipping:
Ice Berry Spice Tea
Picnic Lemonade Punch


For Your Sweet Tooth:
Marshmallow-Almond Key Lime Pie
Ice Cream Sandwich Cake
Frozen Banana Split Dessert
Patriotic Peanut Butter Pie

Grilled Asparagus - Use thick spears of asparagus (Costco has the best). Cut the spears into 1-1/4 inch pieces. Boil the asparagus for two minutes. Drain and return to the pot, and coat lightly with olive oil. Using a grill basket and a low to medium temperature grill, dump the boiled asparagus into the grill basket. Stir frequently to avoid burning, but making sure you get a little blackening evenly. Return asparagus to the pot with the residual olive oil. Serve with hollandaise sauce.
